Vegetable Sambhar Recipe

Sambhar plays a very important role in South Indian Menu. Its aroma itself is so tempting that it automatically appetises your hunger.

There are whole lot varieties of Sambhar and we can make different versions of them suiting to the main dish which we have with it.

The word Sambhar has a very beautiful story behind its name.

In 17th century, there was a famous Maratha Ruler named "SHAHUJI".

One day he invited SAMBHAJI (2nd Emperor of the Maratha Empire) as a guest for having lunch with them.

SHAHUJI wanted to make something for his guests , so he decided to make a maharashtrian dish called "AMTI" but he experimented this with PEGION PEAS instead of Moong BEANS and Tamrind PULP instead of KOKUM.

Everyone liked the dish alot and named it SAMBHAR after the guest of the day "SAMBHAJI". Since "SHAHUJI" was the ruler from Tamil Nadu that's why this dish became the famous South Indian Dish.

Today I am showing the recipe of Vegetable Sambhar.

So lets get started......

Ingredients for Sambhar :-

1) Pegion Beans or Toor Dal - 200 grm ( 2 small cups)

2) Gourd (Lauki) - 250 grams (1 bowl of Lauki pieces ) (optional)

3) Brinjal - 1 to 2(small) (optional)

4) Lady's finger - 4 to 5 (optional)

5) Carrots - 2 small

6) Onion - 1 large (lengthwise cut)

7) Tamarind pulp - 1 bowl

8) Salt - add to taste

9) Oil - 1 to 2 tbsp

10) Mustard seeds - 1 tsp

11) Curry leaves - 7 to 8

12) Jaggery - 2 tsp. (optional)

How To Make Sambhar -

Wash Toor dal and soak it in water for 1-2 hours as it will cook faster and become more delicious. If you do not have time for soaking then you can directly pressure cook it after washing.

I have used only Carrots in my recipe so i put Carrots without water and dal with 2 times more water in a cooker. After 3 whistle,continue for 4-5 minutes on a a low flame. Turn off the gas.

(Note : If you are using Gourd, Brinjal ,Lady's finger then you must wash gourd, brinjal and lady's finger and then cu them into 1 inch long pieces. Add salt to taste and after adding 3-4 tbsp of water, cook the vegetables in a khadai till they become soft.)

Put oil in a pan and heat. Add mustard seeds in hot oil, once seeds crackles add onion and cook till it become little brown in color.Then add all the vegetables in it and cook everything for 2 mins.

Then add Asafoetida (Hing), turmeric powder, red chilli powder and Samber masala.

Mix everything well.

Then add pressure cooked toor dal and water to adjust the consistency and give it a boil.

Add Salt and tamrind pulp and mix it well.I love my sambhar little bit tangy but if you find it too tangy for your taste then you can add jaggery.

At the end we will add few curry leaves.

Adding curry leaves in the last will enhance its taste.Cook the Sambhar for 5-10 mins on a low flame.

Serve Hot..
