Biscuit Cake - Quick Biscuit Cake Recipe - Eggless Steamed Biscuit Cake

This Biscuit Cake is very easy to prepare, taste delicious and needs very few ingredients.You can make this for tea time snacks or just to satisfy your craving. Kids love to eat cakes even we elders too,but because of its lengthy procedure, too much baking time, we often end up buying them from outside, but this biscuit cake is something different because neither it takes lot of time to prepare nor we need any oven or microwave to make this cake.

To make it special, you can decorate the cake with chocolate sauce or with rainbow jimmies.

While making this cake, one more thing struck my mind, that often people does not have any proper container for baking so instead of using our regular aluminium container, I have used Idli stand because these idli stands are easily available at every household. But you can definitely make this cake in our regular tin box.

So lets get started :-

Ingredients for Biscuit Cake Idli

1) Goodday Biscuits - 20 Numbers

2) Sugar - 2 Tablespoon

3) Milk - 1 Cup

4) Eno Salt - 1 Teaspoon

How to make Biscuit Cake Idli

* Powder the biscuits in a mixer.

* Add powdered sugar, cashew nuts (if using) and mix well.

* Add milk (little at a time) and mix without lumps to get a smooth batter. I added one cup of milk.

* Before adding eno/fruit salt, bring water to boil in a cooker and keep it ready.

* Add eno and mix well with a spatula.

* Add Dry Fruits of your choice and mix well.

* Transfer the batter to the greased Idli stand, place it in the cooker, cover the lid and cook it without wrestle.. You should not allow the batter to rest after adding fruit salt. You should steam immediately after adding Eno/Fruit salt.

* Then keep the flame high and steam for 25 minutes. After 25 minutes, lower down the flame on sim and cook it for another 5 minutes. After that turn off the flame. Insert a toothpick in the center of the cake to check if it is cooked. If it comes out clean, it is cooked.

* Leave it to cool. After it is cooled, demold the cake from the Idli Stand.

If you want you can decorate this cake with chocolate sauce and or with rainbow jimmies.

The cake was so spongy and soft that it just melted in our mouth.
