So lets get started...

  • Ghee - 1/4 cup (60 grams)

  • Salt - 1/2 teaspoon or according to taste.

To make filling for samosas.

  • Potatoes - 300 grams (3 medium sized potatoes)

  • Frozen Green peas - 1 Bowl or cup

  • Cashews - 8-10

  • Cumin Seeds - 1 tsp.

  • Green chilli - 1 tbsp. finely chopped

  • Ginger - 1 tbsp. grated

  • Coriander Powder - 3 Tablespoon

  • Garam Masala - 1/4 Tablespoon

  • Amchoor Powder - 1/2 Tablespoons

  • Chaat Masala Powder - 1 tbsp.

  • Red Chilli Powder - 1/4 tsp.

  • Salt - As per taste

  • oil - For frying

How to make Samosa

Firstly, we will make the filling -

For the filling first boil the potatos in the pressure cooker for three whistles.

Peel the boiled potatoes and mash them bit finely. Preheat a pan and add 2 tbsp oil into it.

Till oil is getting hot , add Mango Powder and Chaat Masala Powder in the mashed potatos.

When oil is sufficiently hot add cumin seeds, ginger. green chillis and frozen green peas, coriander powder, garam masala and cashews into it. Mix everything well. Now add finely mashed potatoes and again mix everything well.

Now at the end add salt and mix all the ingredients really well.

Stuffing for samosas is ready. Keep it aside to cool down completely.

For outer Coating -

Add ghee and salt in refined flour (maida) and mix well. With help of lukewarm water, knead tight and stiff dough. Cover the dough and keep it aside for about 20 min to rest.

Now we will start to make samosas-

Make 7-8 balls from the dough, equal in size, and then shape them round. Roll the ball into a circular and flat shaped poori. Keep the poori a bit thick.

Divide the rolled poori into two equal halves. Take one part and fold it in order to make a cone shaped structure. Apply some water on the edges in order to stick the sides.

Stuff the cone with potato filling and seize the remaining side with the help of water and with the help of water. Now you can see that we have form exactly samosa kind of shape. Likewise prepare all samosas.

Pour some oil in a pan and heat it. When oil is sufficiently hot, place 3-4 samosas into it and fry until they turn golden brown.

Keep the flame low while frying samosas. Take out the samosas and serve hot with green coriander chutney or sweet chutney or even with coconut chutney and Enjoy.

Note :-

1) You must add Ghee or Oil in your Samosa dough because it will give a nice and smooth texture to your Samosa covering.

2) Always fry Samosas on low flame, as it will cook the samosa covering evenly from outside as well as from inside.
